Pack it up, not pack it on.

This beauty is a quick salad, side, or dessert. It was originally made to be vegan but for the omnivores out there add some chicken (or maybe leftover turkey..). With a whole grain wrap, bam! Amazing lunch that takes literally 5 minutes to make.

Granted my house usually has chicken in the fridge that I can shred or chop, but the canned version isn’t ‘the debil’ in a pinch.

Produce

4 Apples
1 Stalk Celery
2 cups Grapes, Seedless
1/2 Lemon, Juice From
1 Pear

Baking & Spices

1/8 cups Brown sugar
1/2 tsp Cinnamon, Ground
1/8 cups Granulated sugar

Nuts & Seeds

1/2 cups each Silvered almonds, walnuts (or pecans)
1 cups Chickpeas

Dairy

1 1 1/2 cup 0% fat Greek yogurt

Apples & grapes teamed up with crunchy almonds and walnuts, mixed with a cinnamon-y yogurt sauce. This is one great salad!
